YAM (SWEET POTATO) PIE.

This page is a way to bake a yam (sweet
potato) pie. You can use yams or sweet
potatoes. They are the same type of
food. Some stores will stock both and
some will only stock one of them. Any
recipe that calls for one, you can use the other.
1 can 16 oz cut yams or 2 - 3 medium sweet
potatoes or yams.
2 teaspoons vanilla
1 cup sugar (best to use granulated)
1/2 teaspoon Salt
2/3
cup butter.
1/2 teaspoon freshly grated nutmeg
1/2 teaspoon ground cinnamon
2 eggs, separated
1 1/3 cups milk
2 single crust pie shell
If you are using raw yams or sweet
potatoes you need to peel and cut into chunks.
Bring to boil and let it simmer for 25 minutes or when they are fork
tender.
Mash the yams (sweet potatoes) chunks
and send through a colander to remove all the fibers.
Bring you oven to 350 degrees. Beat the egg yolks. Mix up the mashed yams, sugar, beaten
yolks, vanilla, cinnamon, nutmeg, and butter.
Mix thoroughly, Now add the milk
and stir well.
In another bowl, beat the eggs whites
until frothy and stir into the batter.
Pour the batter into the crusts.
Bake for 40 - 45 minutes, until
the crust is lightly browned and the center jiggles when shaken.
