TOMATO and MUSTARD.

This page is two old time recipe for different types of sauces. The first one is a standard tomato sauce and the 2nd one is a mustard sauce. I have added a meat sauce that you can try.

TOMATO SAUCE

7 basil leaves.
1 finely chopped onion.
6 tablespoon virgin olive oil.
12 to 15 oz can diced tomatoes and juice.
salt and pepper to taste.

Heat the oil and add the onion. Stirring until soft or about 5 minutes. Add the tomatoes and juice and simmer gently for about 11 minutes. Now stir in the basil, salt, and pepper.

You now have a good basic tomato sauce.

MUSTARD SAUCE.

2 cup sour cream
2 tablespoons mustard.
1/4 cup mayonnaise.
salt and pepper to taste.

Mix all the ingredients. Chill for more then 1 hour befor using.

PASTA MEAT SAUCE.

1 lb ground beef or chuck.
1 bell pepper.
1/2 teaspoon garlic powder or one clove.
1 onion.
1 1/2 to 2 cups tomato sauce (see above).

The green pepper would be better. Remove the seed and core and then chopped the balance real fine.

Chop the onion (use a mediun one or 2 small one) real fine. If you are using a clove or garlic chop it up fine also.

Break the meat so that it is in very small parts. Cook and brown the meat but do not remove the fat.

Lower the heat and stir in the garlic and green pepper and cook for about 8 minutes. Now lower the heat and add the tomato sauce and bring mix to a medium heat. When the tomato is nice and worm the green pepper should be done. Check and if not done cook until the pepper is done. This may take from 1/2 hour to 1 hour under a slow simmer. Add salt and other seasoning that you like.

This has now became a good sauce.
