PORTLAND MEADOWS STUFFED POTATO DINNER.

Portland Meadows, Portland local race track, a few years ago wanted to have a one couse dinner that they could make for their help and that they could sell for a low price. They came up with the following recipe for a one item dinner for the help and they sold it to employees for $1.50 and other people for $3.50. Even at that price they were losing money.

They found out, after the parking and ticket price went down to $0.00, that a lot of people came in and picked up a PM potato dinner and would not stay, and as they were losing money, they stopped selling them.

1 potato (see below).
1 to2 cups chili.
1 to 1 to 1 1/2 cup chopped onion.
4 to 6 teaspoon grated cheese.
1/2 cup sour cream whipped.
1/4 lb beef (option).
1/2 cup chives (option).
salt and pepper to taste.
3 strips bacon (option).

Get the largest potato that you can find. PM came up with the largest potatoes that any one had ever seen. They were over 1 pound each. Clean them good as the pealing became part of the meal.

Cook them in your oven or microwave. You may have to cook them longer because of their large size. Cut them in half and open them up on a plate. Use a knife and cut lines into the potato. At this point take the chili and spread it between the potato sides and go past both end.

Now take some butter and spread it over the chili. You may, if wanted, take either 1/4 lb beef or chopped up bacon and then spread it over the butter. Some of the time they would do both. Now spread the onions over all the above items. (Some of the people had them leave off the onions). Spread the grated cheese over every thing. Some people then spread some relish over every thing.

PM then added the sour cream. Some of the people then would go over to the hot dog stand and add hot sauce, mustard or chives. When you see what you have you can see that it would become a one course dinner. Serve this with a drink and you would be full.
