MUFFINS |

| Muffins are easy to make. You make the muffins with a basic menu and then add the topping or filling that you like. The basic receipt is below and at the end there will be a list of different fillings. |

| 4 tablespoon sugar. |
| 2 tablespoons baking powder |
| 1 1/2 cup all-purpose flour. |
| 2 egg yolks. |
| 2/3 cup milk. |
| 1/4 teaspoon salt. |

| Combine egg yolk, cooking oil, and milk and set aside. Combine flour, sugar, baking powder, and salk. Add the egg yolk mixure to the flourmixture all at once and stir until moistened. |
| Place paper cups in the muffin pan and then spoon in 2 tablespoons of the batter into each paper cups. Cook until done when you can scratch the surface with a wooden toothpick. This should make about 12 muffins. |
| Toppings that can be used are; jelly, cream cheese, peanut butter, etc. Almost any thing can be added. If wanted some people will add blueberries into the batter. |

CORN MUFFINS |

| Another type of muffins is what is called corn muffins. Follow are how they are made. |
| 1 cup flour. |
| 1 cup cornmeal (you can use white or yellow mornmeal). |
| 4 teaspoons baking powder . |
| 2 tablespoons sugar. |
| 1 cup milk. |
| 2 eggs. |
| 2 tablespoons butter. |
| 1/3 teaspoon salt. |

| Mix the cornmeal, flour, surgar, baking powder, and salt good. Then add the milk, egg, and butter. Do not overwork. You do not want to over mix. |
| Bake in a muffin tim for 25 1/3 minutes ar 400 degree. This should make about 12 muffins. |
