FISH CHOWDER

Ths is an article on how to make a good fish chowder. You can save it and use it over some time.

5 slices bacon, chopped up.
1 tablespoons flour.
3 lbs fish (any type).
2 cups milk.
3 medium potatoes.
1/2 cup chopped fine parsley.
1 tablespoon salt.
1/8 tablespoon pepper.
1 medium onion chopped up fine, or 1/2 cup chopped onion.

The fish can be any type. Haddock, salmon, etc.

Fry the bacon and add the onon and then cook for about 3 mnutes while stirring.

Skin and remove all the bones from the fish and then cut into pieces from 1/2 to 3/4 inches. Add the potatoes and bring to a boil. Place the items into boiling water. Do not place them in cold water and then bring to a boil.

After they are in the boiling water, cook the fish and potatoes until the potatoes are tender. This should take about 15-20 minutes.

Add the butter and flour to the chowder and stir well. After it is all mixed, add the hot milk, salt and pepper. Add any of your seasoning that you would like to use.

Cover and let simmer for from 5 to 7 minutes.

Sprinkle with the parsley and serve.
