Eggs can come in a large number of sizes. When you see a list you need to know what they mean when they say one extra large egg. If you only have small egg, do you need to use 2 of them. Below I have a listing of what to do.
If they say 1 jumbo egg, you will use one of all the others.
If they say 2 jumbo you will use 2 of all the other but need to use 3 small.
If they say 3 jumbo you will need 4 each of extra large and 4 large, but 4 of medium and small.
If they say 4 jumbo you will need 4 extra large, 5 large, 6 medium, and 7 small.
If they say 5 jumbo you will need 5 extra large, 6 large 7 medium, and 8 small.
Following is how many eggs to use by cup measurement. In 1 cup there are.
Jumbo has 4 eggs, 6 whites, or 12 yolks.
Extra-large has 4 eggs, 6 whites, or 12 yolks
Large has 5 eggs, 7 whites, or 14 yolks.
Medium has 5 eggs, 8 whites, or 16 yolks.
Small has 6 eggs, 9 whites, or 18 yolks.
As you can see this can change the number of eggs that you will need.
