EGGNOG

       This recipe  is an old time recipe on how to make eggnog.   Eggnog

is the drink that a large number will drink over the New Year – Xmas

week.     I lot of people will add a little rum or other drink to the

eggnog mix.     If you do, do not let any one drive.

 

 

 

   9 eggs (separated).  You will use both parts.

 

   1 cup rum or other drinks (optional).

 

   4 cups heavy cream

 

   ¾ cup sugar

  

   2 -3 tablespoons club soda.

 

   Nutmeg  (see below)

 

 

 

       With a electric beater or whisk beat the yolks with sugar until the

mixture become thick and then beat in the rum or other drink.     Now chill

it.

 

 

 

       Take the egg white, beat them until they are stiff but not dry.   You

wants stiff peaks as the egg whites will gradually change from transparent

to opaque to fluffy peaks the keep their shape.   Do not over beat.

 

 

 

       Take the cream, it should be cold, and whip it.   Do not over whip

it as if you do you might make butter..

 

 

 

       Spoon the whites on the whipped-cream mixture.   DO NOT stir them

together.   Use a rubber spatula.  Cut the blade into the center of the

whites and down into the bottom of the cream below.   Now work it around

until you have what some people call a mass.     Chill it.

 

 

 

       Spoon it into a cup or glass after sprinkle some ground nutmeg over

each cup.      Now serve it.
