PEANUT BRITTLE

     One of the old time favorites that most people enjoy is old fashion peanut brittle.

 

     Peanut brittle is easy to make by following the following recipe.

 

  1 tablespoon margarine (You can use butter).

  1 1/2 cups of peanuts.

  1/2 cup light corn syrup.

  1 cup sugar.

  3/4 teaspoon baking soda.

 

    Note: you can use almonds, pecans cashews or walnuts if wanted. On these, you will need to chop them up. Combine the sugar and corn syrup and cook until the sugar is dissolved and the mixture comes to boil.

 

    Add the nuts and then the margarine and cook without stirring until the candy reaches hard-crack stage and the syrup is a clear golden color. Test every 30 seconds by dropping a drop in very cold water until the syrup separate into hard brittle threads and snaps easily. Quickly sprinkle baking soda over mixture and stir and then immediately pour onto pans.

 

    Break into pieces and store at room temperature.
